Our duckling breast is a quality, labor-saving product that always results in a juicy and delicious dish. It is ideal for many diverse preparations.
You will receive two 8 oz duck breasts in each vacuum sealed package.
Signature Recipe:
- Simply put about 4 scores (knife slits on the skin side).
- Season with a bit of salt, pepper and garlic (heavier on the skin side).
- Cook in an untreated skillet on medium high heat, skin-side down for roughly 10 minutes.
- Turn meat side down, and contiinue cooking for about 2 minutes.
- Use a meat thermometer to check for a medium rare temperature of about 120 degrees (F).
Pour excess fat into a disposable container. Vary the cooking on skin-side down to get a good crisp skin.
Experienced chefs may forego the meat thermometer, and just watch for the meat to tighten-up.
